Persimmon Vinaigrette Dressing

  • 1 large or 3 medium persimmon’s, skin and seeds removed
  • 2 tbsp water
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 small garlic clove
  • 1 teaspoon coconut sugar
  • 1/4 teaspoon salt, pepper

Place skinned persimmon is food processor, blend and add the remaining ingredients. Serve over mixed greens.
