- 1 large or 3 medium persimmon’s, skin and seeds removed
- 2 tbsp water
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 2 small garlic clove
- 1 teaspoon coconut sugar
- 1/4 teaspoon salt, pepper
Place skinned persimmon is food processor, blend and add the remaining ingredients. Serve over mixed greens.
