Summer Tomato Gazpacho

  • 4 medium sized tomatoes diced
  • ⅓ cup lime juice
  • 1 jalapeno seeded
  • 2 cloves garlic
  • 1 tbsp fresh chive
  • 6 medium basil leaves
  • 2 tbsp balsamic vinegar
  • ½ tsp cumin
  • ½ himalayan salt
  • 1 medium cucumber seeded and diced
  • 1 medium green pepper seeded and chopped
  • ½ cup red onion
  • ⅔ cup croutons




Directions:
Place ¾ of diced tomatoes, lime juice jalapeno, garlic, herbs, spices and balsamic in food processor on high. Puree until smooth.  Next add the rest of the tomatoes, cucumbers, green pepper and red onion into pureed mixture.  Refrigerate for a few hours before serving to allow all the flavors to combine
